Spiced Cider Recipe
My last batch of spiced cider came out excellent, so here's the recipe:
5 Gallons of unfiltered Cider
10 sticks of Cinnamon
1 tbs whole cloves
1 tbs whole allspice
1 tsp nutmeg powder
1.5 lbs light brown sugar
White Labs Cider Yeast
Throw all ingredients into a pot and boil for one hour, cool and pitch yeast.
Ferment 10 days, rack to a secondary, let fermentation continue until complete (4-5 days).
Prime with 2/3 cup table sugar, bottle and let condition for 2-3 weeks.
Original Gravity: 62
Final Gravity: 4
Alc 7.482%
Notes:
Despite its high level of alcohol, the final product is fairly dry, slightly sweet, lightly carbonated, and without any of the alcohol smell or flavor you'd expect with a 7.5% drink.
The cloves are a bit heavy in the final flavor, unless you really like cloves I would cut them down to about 3/4 of a tbs. You might also use 3/4 of a cup of sugar if you like a high level of carbonation.

Dangerous work
I was making a yeast starter yesterday and I screwed up. I took a 750ml beer bottle out of my hot sanitizer solution, and proceeded to pour nearly boiling wort into it, filling it about 1/2 way. Then, for some reason, I decided to cool the bottle rapidly by running cold water over it.
So, I'm standing at my sink bottle in hand running cold over it, when I hear a click. CLICK.
I freeze and the bottom of the bottle falls off in a very neat, clean cut. Hot wort splashes everywhere, burring my arm from elbow to wrist. That hurts, it hurts a lot.
So don't let anyone tell you brewing beer isn't dangerous work!
Also, remember that glass is very temperature sensitive and it will break if you do something stupid.
