I've got two observations about yeast start times today.
First, if you are making something highly acidic, like hard lemonade, expect fermentation to be very slow. Even with a starter it can easily take 36 hours for the yeast to establish itself, and two full weeks after that for it to finish primary fermentation.
Second, if you are making 2 batches of beer at once, but only have one tube of yeast you CAN split the tube into the two batches. It will increase the lag to high fermentation from 12 hours to about 48, but you can do it if you're not in a time crunch.
